Will Cynthia cook in 2009??

We were talking about New Years resolutions again today and Cynthia is making a resolution to cook in 2009. She's been eating out of boxes for years!

Here are a couple recipes sent to us...

Meatloaf
2 lbs. Hamburger
1 pkg of Dry Stovetop Stuffing Mix
2 eggs
1 cup milk
salt and pepper
can of pineapple chunks

Mix all together & put into meatloaf pan . Mix together topping for it: 1/2 cup soy sauce, 1/4 cup brown sugar, 1 cup of ketchup, 1/4 cup of pineapple juice from the chunks pour over top of meat then top with pineapple chunks. I don’t do the topping I just find some sweet BBQ sauce and put the pineapple chunks. It is more simple but tastes great.
Bake @ 350 for 1 hour 15 min. It might take a few more minutes than this depending on oven.

Zita had an easy one too. Put boneless skinless Chicken breasts in a crockpot with a can of Dr. Pepper and a jar of BBQ sauce. It will make the house smell good too!

Hi Tim: This is Zita with the crockpot recipe. I wanted to let you know this works with pork chops, ribs and kielbasa sausage. :) I have lots more easy crockpot recipes. Let me now if you or your listeners have any questions.

Dr. Pepper Chicken

Serving size 4


Ingredients
4 boneless, skinless chicken breasts
1/2 can Dr. Pepper
1 cup barbecue sauce of your choice
1 chopped onions(optional)
salt and pepper to taste
Instructions

Spray inside of crockpot with cooking spray.

Place chicken breasts in crock.

Pour barbecue sauce on top of chicken.

Pour Dr. Pepper (or generic Dr. Pepper soda) on top.

If using, add chopped onion.

Cook on low for 6 hours.

Taste and adjust seasonings. You can add more Dr. Pepper at this point if you like.

Serve over rice. :)

Noe: Unless you are browning the chicken in a skillet on the stove prior to slow cooking, make sure you do not have any skin on the chicken. In my experience, chicken skin in the crockpot comes out rather slimy. Yuck!



Also, I recommend spraying your crockpot with cooking spray prior to cooking. It makes clean up much easier.

I have a great crockpot recipe for you & Cynthia that is easy, healthy but tastes great.
Cindy's Turkey Chili
1-2 lbs ground turkey (85%lean works best
5 cans black beans
2-3 cans diced petite tomatos
1 can tomato sauce
taco seasoning to taste
chili pepper to taste
1 tsp minced garlic

brown the turkey in a skillet with taco seasoning and garlic, put in crock pot
drain black beans and rinse, put in crock pot.
add remaining ingredients and one can of water, set crock pot on low and leave for at least 6 hours, can sit for up to 10 hours.
add more spice if need be when you get home, serve it up :)
My 6 yr old son and 2 yr old daughter love this one:)
